Creole Beans and Rice

Ingredients
  1. 2 tsp vegetable oil
  2. 1 cup chopped celery
  3. 1 chopped onion
  4. 1 small chopped red bell pepper
  5. 2 Jalapeno peppers, seeded and finely chopped
  6. 16 oz can tomato sauce
  7. 15 oz can red beans
  8. 15 oz can black beans
  9. 14 oz can vegetable broth
  10. 1/2 cup uncooked long grain rice
  11. 1/2 tsp hot red pepper sauce
Instructions
  1. Heat oil in D.O. at 325 degrees.
  2. Add celery, onion, peppers.
  3. Cook until tender, about 8 minutes.
  4. Add all ingredients and mix well.
  5. Bring to a boil.
  6. Reduce heat.
  7. Cover and simmer until rice is cooked, about 20 minutes.
